Nacho cheese sauce. What comes to mind is that nasty day-glow orange colored goo made up of a list of “you don’t want to know” ingredients. If you have even the slightest of digestive issues you’ll want to avoid it and the stale poor quality chips that are usually served along with it.Here I’ve come up with a very satisfying alternative without even touching a dairy product. That’s a real plus for those of you who just don’t get along with milk and cheese very well.

Nutritional yeast is an awesome secret ingredient to layer flavor but also has many health benefits. It’s a very important source of vitamin B12 if you are a vegan since most sources of B12 are from animals. There are 8 grams of protein in 2 tablespoons. Wow! That’s pretty impressive. The fiber in “nooch”, it’s nickname” helps with digestion and blood sugar balance. It’s a great source of thiamin, one of the B vitamins which helps convert food into fuel so your body can use it for energy. And finally, what it doesn’t contain is gluten.Go ahead and dip chips or veggies in this vegan dip or you have the option of thinning it with just a little water to create a zesty sauce for vegetables, fish, or chicken. I’m thinking it would totally elevate a bowl of steamed kale or chard with brown rice to a new level. Get creative with this one!

Nacho Cheese Sauce

3 cups
  • 1 cup water
  • 3 tablespoons lemon juice
  • cup roasted red peppers, roughly chopped
  • ¾ cup almonds, soaked 2 hours, drained
  • cup nutritional yeast
  • 1 teaspoon chili powder
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ½ teaspoon sea salt
  • Place all ingredients in a high speed blender and blend until smooth.
  • Enjoy with chips or vegetables.
